What is Raw Cacao? 1

One question I get a lot is - what is a raw cacao?

Why should I bother eating it? Surely it's just hyped up versions of regular cocoa...

Right...?

Well Raw cacao is actually quite different from the common "Cocoa" most of us grew up with in our chocolate brownies.  Cacao (pronounced "cu-COW") refers to the Theobroma Cacao tree from which Cocoa is derived, and is used when referring to unprocessed versions of the cacao bean.

Normal cocoa powder and chocolate have been chemically processed and roasted, which destroys a large amount of the antioxidants and flavanols (the things that keep you young and healthy).  A recent study suggested that between 60% and 90% of the original antioxidants in cacao are lost through common "Dutch processing".  Dutch processing was originally developed in the early 19th Century to reduce the bitterness, darken the colour, and create a more mellow flavour to chocolate, but unfortunately also eliminated a bunch of the goodness.

Non-organic cocoa (and non-organic chocolate) has also been treated heavily with toxic pesticides and fumigation chemicals, and may contain genetically modified (GMO) products.

If that wasn't enough, Oxfam estimates that over 70% of the world's cocoa is grown by indigenous communities who are paid such a low wage that poverty is widespread. In some instances child slaves are used, forced to engage in dangerous work such as using machetes and applying toxic pesticides.  Big incentive to reach for a bar of fairly traded chocolate when your next craving hits!

5 Little Known Benefits of Raw Organic Cacao

1.  40 Times the Antioxidants of Blueberries

Raw Organic Cacao has over 40 times the antioxidants of blueberries.  Yes 40 times!  It has an amazing ORAC score of 98,000 per 100g, vs blueberries at a mere 2,400.  ORAC scores measure the ability of antioxidants to absorb free radicals (that come from pollution and toxins in our environment), which cause cell and tissue damage and can lead to diseases such as cancer.

2.  Highest Plant-Based Source of Iron

On a plant-based/vegan diet and looking for iron?  The search is over!  Cacao is the highest plant-based source of iron known to man, at a whopping 7.3mg per 100g.  This compares to beef and lamb at 2.5mg, and spinach at 3.6mg.

3.  Full of Magnesium for a Healthy Heart & Brain

Raw Organic cacao is also one of the highest plant-based sources of magnesium, the most deficient mineral in the Western world.  Magnesium is important for a healthy heart, and helps turn glucose into energy enabling your brain to work with laser-sharp clarity and focus.  The reason why you might turn to a bar of chocolate during an all-nighter at your desk!

4.  More Calcium Than Cow's Milk

Raw Organic Cacao has more calcium than cow's milk would you believe, at 160mg per 100g vs only 125mg per 100ml of milk.  Time to switch out the trim latte for a couple of squares of dairy free raw chocolate.

5.  A Natural Mood Elevator and Anti-Depressant

Cacao is a great source of four scientifically proven bliss chemicals - serotonin, tryptophan, tyrosine and phenylethylamine.  These neurotransmitters are associated with cosy feelings of wellbeing, happiness, and can even alleviate depression.  A natural, healthy, delicious (and legal) way to get your happy buzz on.

Cacao vs. Cocoa - What's the difference? 1

Craving chocolate?

You aren’t alone. Chocolate tops the list of food cravings.

Now, digging into a milk chocolate bar isn't going to do your diet any favors. You know this – as much as you may hate to admit it.

Regular milk chocolate is loaded with sugar, rich in fat, and contains nearly as much energy as a full meal.

That doesn’t mean you can’t satisfy your craving. There are healthier forms of chocolate that you can turn to. Namely, cacao and cocoa.

Not sure the difference between them? Let’s take a closer look so you know which option you should add to your diet – guilt free.

Cacao

A lot of people have never tried cacao, or even heard of it for that matter.

Cacao is the purest form of chocolate that you can eat so it’s far less processed than anything else you’ll get. As a general rule, the less processed a food is, the healthier it is for you, so that puts cacao on top.

Cacao is a rich source of

  • antioxidants
  • magnesium

This is important for active people because magnesium is required for maintaining strong bones, stabilizing blood sugar and keeping energy levels up. In fact, chocolate cravings and magnesium deficiencies have been closely linked.

Cacao comes from cacao pods, which grow on the cacao fruit tree. The pods are cracked open to release the cacao beans, which can then be processed to form either:

  • cacao butter
  • cacao nibs (beans chopped up into edible pieces)
  • cacao paste (melted nibs)
  • cacao powder

Cacao is great for baked recipes and is a terrific source of fiber and nutrients. You’ll also take in some monounsaturated fats with cacao, and even a small dose of protein. It's also what we use in Wilde Chocolate!

Cocoa

Cocoa on the other hand, is more processed than cacao is and is the form that you’ve likely used before. It’s widely available and comes in many different varieties – both sweetened and unsweetened.

If using cocoa, you’ll want to get the unsweetened variety to avoid excess sugar.

Cocoa is cheaper than buying cacao, and still a better option than milk chocolate as long as you choose one that's as natural as possible.

Make sure it doesn’t have any:

  • added sugars
  • added milk fats
  • oils

This isn’t to say it doesn’t have any antioxidants, they just aren’t quite as significant as cacao is.

Studies also suggest that coco, as well as cacao, can help to improve heart health as well.

If you really want to ensure optimal health, opt for cacao in any one of the varieties it comes in, including in Wilde Chocolate bars.

Yours in Health,

Rich Wilde

The Best Organic, Hand Picked, Fair Trade, And Jungle Grown Raw Cacao Beans...

While most chocolate companies use cheap mass produced cacao beans, our beans are hand-picked under Fair Trade standards in the wild jungles of Ecuador, where the cacao grows naturally.

That means no destructive farms, plantations, or slave labor are involved to create our award winning chocolate bars.

This has allowed us to create a truly sustainable business where Wilde Chocolate products are made only in small batches by hand with the planets best cacao beans: Wild Harvested Heirloom Ecuadorian Arriba Criollo
.

Arriba Criollo yields unprecedented flavor profile!

Did you know that less than 1% of all chocolate worldwide is made with these beans?

That’s because Arriba Criollo is extremely rare. These heirloom trees cannot be replicated for farming and mass production. They only thrive in the jungles of Ecuador, where they grow naturally in mineral rich volcanic soil at high elevation.

You truly cannot beat the Criollo's unique floral aroma and incredible flavor profile. This is why it's considered by master chocolatiers to have the world's finest flavor.

Unfortunately most cheap massed produced chocolates have tons of unnecessary ingredients and harmful fillers added to their chocolates. They do this to make their chocolate taste good because their beans are of such low quality.

But we never add any chemical fillers or binders (or stabilizers, or milk, or anything else that doesn't promote your health) because these trees have naturally perfected incredible flavor that simply cannot be beat.

Add that with the fact that we handcraft all of our chocolates in small batches with 100% all natural sweeteners, and you start to understand just how amazing our chocolates really are!

Not only do they taste good, but they're actually really good for you too...

Chocolate bars with benefits!

We have truly chosen the finest quality cacao beans in the world. Not only are they the most environmentally friendly beans for the planet, but they are also the best choice to promote your health too!

Raw cacao contains the highest concentration of anti-oxidants of any food in the world. It has 20 times the anti-oxidant properties of blueberries.

Anti-oxidants help neutralize free radicals which is a major cause of many degenerative diseases, cancer tumors, heart disease, and premature aging.

The conventional method of making massed produced chocolate includes pulverizing and roasting the beans, which destroys most of the flavanols that give you the anti-oxidant boost your looking for.

This is why Norm Hollenberg, a radiology professor and flavanol expert at Harvard Medical School says "Most chocolate, in fact, isn't flavanol-rich". But Wilde Chocolate is!

Secret cure for rampant magnesium deficiency

Did you know scientific studies show that 80% of Americans are deficient in magnesium? This deficiency is linked to hypertension, heart disease, diabetes, joint problems, and PMT.

Raw cacao contains the highest concentration of magnesium of any food in the world.

These are just a two of the reasons why pure unadulterated raw chocolate, is considered natures most powerful superfood.

To us, there’s nothing more incredible than the healing power of this natural bean!
